Sugaring Season

Anybody out there cooking sap?

Seems like our trees are finally starting to run.  They puked out a gallon each overnight.  I finally have enough to start cooking it down.

My dad usually runs a sugar shack depending on how the current stock of syrup.  You ever mix a tablespoon full of syrup with milk?  It's REALLY good.

What does one typically use tree sap for in cooking other than syrup?

Cook it down to syrup.  Cook it further and you can make candy, sugar, butter/cream etc.

Some people are starting to sell the straight sap for drinking.

Can you add some yeast and ferment the raw sap?

Seems like a good sugar source...

I doubt it.  Sap is 1-2% sugar.  The yeast would starve.


Although, perhaps you could add it to the finished syrup.  Similar to making mead from honey.

You can boil it down to strengthen it, but usually you need to add honey or something to make it more "mead" like.  It would be an interesting distillation though.  Hmmm...
