I'm kinda happy with this one... last night I threw together some scampi sauce and added some onion, mussels, yellow bell pepper and some diced tomatoes over spaghetti. Powdered it with romano and whammo... 10 minute yummies. Damn, it was good.

Nah, I happen to like food and spend a lot of my personal money on food. I would never expense a meal like that - it's completely unethical (especially since I work with hospitals and they could use that money on additional nursing staff, free care for indigent patients, or research). I buy art when I travel because I appreciate things I cannot do. I consider food like this art, because there's no way I could conceptualize most stuff that's going on in their mind when they create it. Some of the food is overly fussy and 'too much,' but other dishes are totally brilliant. At any rate, yep. I pay for this myself and it's a hobby for me, like motorcycles.

Just an electric griddle sitting on the stove top. Keeps the greasy splatter contained and allows use of the exhaust fan to keep the grease "vapor" from getting all over the kitchen.

There are plenty of stove top griddles that sit on top the burners.
Do you mean one built into the stove with a themostat?
That's awesome. I wish I hadn't have said, "get what you want," to Mrs. Wedge.
I was at Meijers last night (had to pick up a baking dish for a Mrs. CB recipe) and they didn't have any electric griddles. WTF?

Loves me some Reuben sammiches. Not enough sauerkraut on that one though.
I once ordered a Reuben, not knowing what it was. I went hungry that day. :hurl:
There's good Reuben's and there's bad Reuben's. A proper Reuben will be piled high with corned beef, sauerkraut, and good thousand island dressing. Here in Chicago we know how to do it rite.

Simple. Chop a small pkg of bacon cook and drain. Chop some garlic and a small sweet onion. Fry the onion/garlic in a small bit of bacon grease lightly scramble 6/7 eggs. Mix it all up and poor it in a greased (Pam) pre heated (350) skillet. 20/25 at 350° minutes later turn the oven off put the desired amount of cheese on it and leave it in the oven while you make the pancakes.
Get on it.

It was indeed! That was 12 hours into an 18 hour smoke. Here's the result:

I love cooking outside (grill, campfire, you name it...). :bigok:
I'm looking to add either a smoker or outdoor pizza oven to broaden our outdoor cooking capabilities.
I have to learn to relax when going to cookouts I'm invited to. I watch the host stand around the grill and cringe everytime I see the following:
* leaving the grill cover open.
* moving / flipping the meat too often (especially beef).
* smashing burger patties on the grill with the spatula
* placing the cooked meat back onto the same plate which was the source of the raw meat w/o cleaning it (this one is a deal breaker for me - I will not eat the food if this was done).

Far too many people believe this. It makes me sad.
For those people that can't figure out what food is:
This is Matt's dog, Leo. He doesn't have anything to do with this story, but just look at his awesome stupid face
When one of my inlaws grills they actually judge the "done-ness" by when there is no more juice. Seriously. I grilled a few times and they object because "There's too much juice- it's not done." Long ago I gave it up to my brother in law- I only cook my own.My parents were bad, and the only people I have met that were worse were their friends. They cooked meat until the entire outside was blackened and the inside was 100% grey. :'( I almost pretended I was a vegetarian just to get out of eating that mess.
Of course to them you also never buy anything but sirloin- there's no difference in the cuts really besides cost.

I’ve spilled a lot of virtual ink on Soylent over the past year—I count thirteen pieces, including the five-day experiment from last summer when I ate nothing but the stuff for a full week. This, though, is probably the last Soylent-specific piece that I’ll write for a while. It’s the piece that I’ve wanted to do all along.
Here we're going to talk about how the final mass-produced Soylent product fits into my life, without any stunts or multi-day binges. More importantly, we're going to take a look at exactly what might drive someone in the most food-saturated culture in the world to bypass thousands of healthy, normal, human-food meal choices in favor of nutritive goop. It's something a lot of folks simply can't seem to wrap their heads around. Today it's relatively easy to make a healthy meal, so why in the hell would anyone pour Soylent down their throat?
But if you're asking that question and genuinely can't see an answer, then you're demonstrating both a profound over-projection of your own cultural norms and also a stunning lack of empathy. Food is for some people a genuine struggle. Just because many in the first world have the ability to go to a grocery store and stock up on healthy stuff doesn't mean it's easy, or even possible, for everyone. Blithely dismissing someone's inability to whip up a healthy meal by tossing off a condescending "Soylent? Gross! You don't need that! Just go cook something quick and healthy!" can be about as wrongheaded and insensitive as telling an alcoholic that they could fix all their problems by just drinking less or telling a clinically depressed person that they'd feel better if they'd just stop moping and cheer up.

Pork chops simmering with bell peppers, onions, and blue potatoes from the garden in a spicy southwest gravy. Lots of chilies and garlic.
We didn't want to heat up the house during our first heatwave of the summer, so we went old school on the firepit. Nothing beats cast iron cooking.

Stuffed flank steak with olive tapenade and fresh spinach and grilled it. Served with oven - roasted potatoes and a simple spinach salad.
Protip: Cut the flank steak in half horizontally as much as you can without going through. Open like a book. Then add the tapenade and the spinach. Makes it easier to roll and cook.

1 c. dry quinoa
1 shallot, diced
2 cloves garlic, diced
1/4 c. pine nuts
3-4 sundried tomatoes, diced
2 tbsp fresh basil, finely chopped
1 tbsp. olive oil
1/2 c. Parmesan cheese
sea salt and black pepper to taste
Cook quinoa in 2 cups water. Once cooked, set aside and allow to cool. Heat olive oil in a small pan over medium heat. Saute shallot, garlic, pine nuts and basil until shallots and garlic are transparent and nuts are a light brown color. Mix into quinoa with cheese and tomatoes. Add salt and pepper to taste. Serve cold to hungry party guests and watch it disappear.

If anyone is interested in a set of these, we're clearing out Mom & Dad's home. They served a family of seven (5+2). Large / medium / small plates, saucers, cups, etc. Well used (but the things don't really wear out).
Located in Rockford IL. PM if interested.

It's called a Brunch Chicken. Avocado, apple, bacon, Swiss, lettuce and French. Was a very good recommendation.

Sounds good. I'd leave off the avocado myself though.

You know you can get the same desired effect on both sides by flipping it with a spatula, right? ;) With fewer dishes to do too.

Well that changes everything there.
Then for my wife's birthday, I cooked up a mess of her favorite.....fried okra....
It's...an acquired taste. I try to like it. But...well....I can't. :hurl:
Her sister, dad, and brother all love it. Must be the Okie blood in 'em...

Stayed close to home for Valentine's Day, as Mrs. Stormcrow is working furiously in the studio to finish two new pieces for the Arts and Crafts Conference (think the early 20th century esthetic, not finger paints) at the Grove Park Inn in Asheville NC next weekend. Balkenbrij. It's SUCH a treat for me! My dad usually makes it this time of year. It contains grains, meats, some pork liver, and other things. He makes it and bakes it in loaf pans, then you take it out, slice it, and fry it- for me in Olive oil. Add some syrup and you're good to go!

No, there is not and I cry when someone overcooks good beef.
When we go there the only steak I cook is my own now. I have been replaced since I leave them too juicy. Note: NOT rare-the complaint is the juice.
+1. My in-laws? "There's too much juice- can you put it on again?"
It's taken me 12 years to get her down to medium. Another few years should have her enjoying medium-rare.
I'm not a good griller and I have a tendency to over grill meat. I'm getting better. I just need to pull it off before it looks done.

:lol:It's taken me 12 years to get her down to medium. Another few years should have her enjoying medium-rare.
I've got my wife down to medium. Her mom, however, likes it well done and generally uses steak sauce.
So, when I'm at the butcher, I order USDA prime cuts for me and Sheri and a USDA select cut for her mom. And when he doesn't have select, I'll at least spring for the choice. Why waste a good cut on overcooking and steak sauce?
That"s one rare steak.Looks about medium rare to me. Pics usually make it look rarer than it is. In any case, nummy!
Someone's gonna need to adjust their preload after that lunch.

No pics, but a recipe I have just made up. Recording here for posterity,This sounds frickin' AWESOME.
A cup of raw cashews soaked overnight.
Two large bulbs of garlic, chopped.
Juice of half a lemon.
Teaspoon of honey.
Put this all together and make a paste. Use a blender or something similar. It needs to be very fine.
Chop up two medium sized onions finely and fry in a cast iron pan, with 3" of cinnamon stick and 4 green cardamom and two or three cloves. Fry until the onion is brown. Use vegetable oil-about two desert spoons. You could zap this into a paste too.
Add the cashew paste and two teaspoons of ginger paste, or two inches of finely chopped or shredded ginger. Add chilli to taste. For this, I would use lemon chillies-3-4.
After 10 minutes (if it starts to stick, add water) add 1/2 teaspoon of turmeric, one heaped teaspoon of ground cumin and two of ground coriander. Continue to fry off for two minutes.
Add about a pound of chicken breast, chopped into bite sizes pieces. (300-500 grammes). Add four finely chopped tomatoes.
Continue to cook for five minutes.
Add half a pot of Greek style yoghurt and salt to taste, stir in slowly, so it doesn't curdel. Add a cup of water,
In a seperate pan, cook small potatoes or large potatoes cut up (about roasting potatoe size) and add half a teaspoon of turmeric.
When the potatoes are half cooked, combine with the chicken pan.
Cook until the marsala (gravy) splits and serve.
Yum.
So now you are torturing us! Looks scrumptious.
