Home made chicken noodle soup in the Instant Pot.

The home made bread was something I made a few days ago and, other than starting at midnight for some reason, has become just a thing.

On each tenderloin, lay down strips of fresh pineapple. Finely chopped chives, then alternately layer panachetta and provolone.
Roll and tie with butchers twine.

Sous Vide for 8hrs.
Remove from Sous Vide and sear.

Watch ppls brainstems rotate when they taste it.

Hey speaking of lamb... Easter, the whole family gets together, usually, we do in a turkey and a ham.  This year, I decided to do a full leg of lamb in addition to those.

I didn't even marinate it.  Use 150g of mustard powder as a rub. Throw in some fresh rosemary. Sous vide (can you tell I'm a sous vide convert!) for 16 hours.  Throw onto a pre-heated BBQ to sear.  It will flame up like crazy, get some long bbq forks!

Serve.

Half the ppl at dinner disliked lamb because they claim it's gamey, and, it is if you don't take some steps.  I asked them to at least try the lamb.

They damn near fought over it it was so good.  "I CANNOT believe this is lamb."  You know when you make something really good and ppl stop talking because their focused on eating. Ya, that happened.

Chicken Saltimbocca with sage from my garden served over barley cooked in beef broth with a bit of pepper. Fresh green salad with greens from my garden and an avocado from the neighbor's yard (Hass). Homemade balsamic vinaigrette. 2014 Rusack Chardonnay (a light red would have been better, but hey, life is about not pairing sometimes). Served in a flute because I was drinking Prosecco earlier and since I'm the dish washer, one less glass is ok by me. Dining al fresco at the new outdoor dining table.

It was seared afterwards.  :)    I sous vide the crap out of everything and have my limits.  Given the sear finish (and the image above), it looks good to me.

I've owned a Weber kettle for a while now for charcoal bbq-ing.  I never realized it could be used as a smoker till my oldest son mentioned it as I was drooling over his big backyard smoker.  Google to the rescue for info and sure enough it will work just fine. 


We got some cherrywood charcoal last week and I tried bbq-ing with that today.  Lots of good aroma, flavor and smoked like peat burning!  Tomorrow, I'll be getting a pro grade Smoke thermometer and setting up to do a pork butt one day this week.  Starting small and will be trying stuff as time and tastes allow.    :smiley_thumb:   I've gotten bored with the usual fare that I cook when home alone all week.  Experimentation might bring my appetite back.

I used mine for many years like that- the trick with the kettle is keeping the temp stable.  You almost need to sit near it until you get the air flows set right and stable- but it works!

I got a Weber Smoky Mtn smoker for Christmas- to me that is the single biggest difference- the smoker holds temp more stable.

The smoker gave me fits yesterday. Coals went out twice. Took forever to get the temp stable. I think I "over chipped" the lump charcoal and smothered it.

I was going to smoke some cream cheese but I was wrong when I thought I already had some.

Smoked corn on the cob, bakers, a pork tenderloin, and grills brats were also done because there was enough charcoal for the neighborhood.

The ribs have been seared and the mirepoix sautéed.  I deglazed the dutch oven with bourbon followed by beef stock, tomato paste, and water.  The ribs simmered on the stove top for a brief while before being placed in the oven for 4ish hours to braise.   I can taste the slow-cooked meat now.  I can't wait for dinner.  Now off to prep the sides!

re:  spinach souffle, I never dreamed of mixing cream cheese with spinach.  I saw the recipe and had to try it.

Homemade Bolognese Sauce served on Penne with freshly shredded parmesan.


The Bolognese was made with ground beef, ground pork, bacon, mirepoix, tomato puree, milk, wine, and shallots.
